Citrus fruits have long had a reputation for high
concentrations of healthful nutrients such as vitamin C, and recent research
continues to uncover new health benefits from many citrus flavonoids. Although
the flavonoids are abundant within the fruit itself, they are found in highest
concentration in the peel -- which means that unless you're cooking with citrus
